Southern Bacon-Wrapped Meatloaf
Ingredients
2 pounds ground beef
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 large eggs
½ cup milk
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
10 to 12 slices bacon

For the glaze:
½ cup ketchup
2 tablespoons brown sugar
1 tablespoon mustard

Instructions
Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

In a large bowl, combine the ground beef, breadcrumbs, chopped onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix gently until everything is well combined.

Shape the meat mixture into a loaf and place it in the prepared pan or on the baking sheet. Lay the bacon slices across the top of the meatloaf, slightly overlapping them to cover the surface.

In a small bowl, mix together the ketchup, brown sugar, and mustard to make the glaze. Spread half of the glaze over the bacon-covered meatloaf.

Bake for 40 minutes, then remove from the oven and spread the remaining glaze on top. Return the meatloaf to the oven and bake for another 20 to 25 minutes, or until fully cooked and the bacon is crisp.

Let the meatloaf rest for about 10 minutes before slicing and serving.
