This sweet and spicy pineapple jalapeño jelly is bright, tangy, and packed with tropical flavor and a gentle kick of heat. Perfect served over cream cheese with crackers, glazed on chicken, or spread on sandwiches and biscuits.
Ingredients
3 cups finely chopped fresh pineapple
3–4 jalapeños, finely chopped
1 cup apple cider vinegar
5 cups granulated sugar
1 pouch (3 oz) liquid fruit pectin
1 teaspoon butter (optional, reduces foam)
Optional Add-Ins
Red bell pepper for color and sweetness
Extra jalapeños for more heat
Pinch of chili flakes
Lime juice for a citrus twist
Instructions
Step 1: Prepare the Ingredients
Finely chop the pineapple and jalapeños.
Remove jalapeño seeds for milder jelly, or keep some seeds for extra heat.
Step 2: Cook the Mixture
In a large saucepan, combine pineapple, jalapeños, vinegar, and sugar.
Stir well and bring to a rolling boil over medium-high heat.
Add butter if using.
Boil for about 8–10 minutes, stirring frequently.
Step 3: Add the Pectin
Stir in the liquid pectin.
Return to a hard boil for 1 full minute.
Remove from heat and skim off foam if needed.
Step 4: Jar the Jelly
Carefully ladle hot jelly into sterilized jars, leaving about 1/4 inch headspace.
Wipe rims clean and seal with lids.
Step 5: Process (Optional for Long Storage)
Process jars in a boiling water bath for 10 minutes if storing long-term.
