Creamy Egg & Cheese Pasta
🧾 Ingredients (2–3 servings)
250 g pasta (spaghetti, fettuccine, or penne)
2 large eggs
1/2 cup (50 g) grated cheese (Parmesan or any hard cheese)
1/2 cup (120 ml) heavy cream (optional, for extra creaminess)
2 cloves garlic, minced
1 tbsp butter or olive oil
Salt & black pepper to taste
1/4 cup pasta cooking water (reserved)
Optional add-ins:
Cooked chicken or beef
Mushrooms
Spinach
Crispy bacon
👨‍🍳 Instructions

  1. Cook the pasta
    Boil salted water and cook pasta until al dente.
    Reserve 1/4 cup of pasta water, then drain.
  2. Prepare the sauce base
    In a bowl, whisk together:
    eggs
    grated cheese
    black pepper
    Set aside.
  3. Sauté garlic
    In a pan, heat butter or oil.
    Add garlic and cook for about 30 seconds (don’t burn).
  4. Combine everything
    Add hot pasta to the pan and toss.
    Remove pan from heat (important!).
    Pour in the egg & cheese mixture while stirring quickly.
  5. Make it creamy
    Add a splash of reserved pasta water and/or cream.
    Stir continuously until a smooth, creamy sauce forms (no scrambling).
  6. Serve
    Taste and adjust salt/pepper.
    Top with extra cheese and serve immediately.
    💡 Tips for success
    Remove from heat before adding eggs to avoid scrambling
    Use hot pasta to gently cook the eggs into a sauce
    Add pasta water gradually for perfect consistency
    Use freshly grated cheese for best melting
