  • 100ml milk
  • 6 eggs (separated)
  • 140g sugar
  • 60g cake flour
  • 20g cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

  1. Preheat oven to 150°C (300°F).
  2. Line a baking pan with parchment paper.

  5. Sift in flour and cornstarch. Stir until silky smooth.

  7. Gently fold the egg whites into the batter in batches. Do not overmix.
  8. Pour batter into pan and place it inside a larger pan filled with hot water (water bath).
  9. Bake for 55–65 minutes until golden brown on top.
  10. Let cool slowly before removing from pan. Chill for the best texture.
