Homemade Lemon Liqueur (Limoncello Style)

Infusing time: 7–10 days
Yields: About 2 liters
Ingredients
8–10 large lemons (organic if possible)
750 ml vodka (or pure alcohol diluted to drinking strength)
3 cups water
2 to 2½ cups granulated sugar
Instructions
Prepare the lemons
Wash lemons very well.
Peel the yellow outer skin only (avoid the white bitter pith).
Use a vegetable peeler for thick strips.
Infuse
Place lemon peels in a large glass jar.
Pour vodka over the peels, ensuring they are fully submerged.
Seal tightly and store in a cool, dark place for 7–10 days.
Shake gently every day.
(The liquid will turn bright yellow.)
Make sugar syrup
In a saucepan, heat water and sugar until fully dissolved.
Let cool completely.
Strain & combine
Strain the infused alcohol to remove peels.
Mix with cooled sugar syrup. Stir well.
Bottle & rest
Pour into clean bottles.
Let rest another 3–5 days before serving.
How to Serve
Store in freezer (it won’t freeze due to alcohol).
Serve ice cold in small glasses.
Great after meals as a digestif.
