Absolutely Delicious Veggie Party Soup (10-Min Prep)

A crowd-pleasing, comforting soup that tastes even better the next day. Easy enough for weeknights, special enough for guests.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (400g)
  • 6 cups vegetable broth
  • 1 cup green beans or peas
  • 2 cups spinach or cabbage
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Optional: chili flakes, fresh parsley, squeeze of lemon

Instructions

  1. Prep everything
    Chop vegetables — should take around 10 minutes.
  2. Build flavor
    Heat olive oil in a large pot. Add onion, garlic, carrots, celery. Cook 4–5 minutes.
  3. Add remaining vegetables
    Stir in zucchini, bell pepper, tomatoes, green beans.
  4. Add broth & seasonings
    Pour in broth. Add salt, pepper, Italian seasoning, paprika.
  5. Simmer
    Bring to a boil, then lower heat and simmer 20–25 minutes.
  6. Finish
    Add spinach/cabbage in last 2–3 minutes. Add lemon juice if desired.
