Absolutely Delicious Veggie Party Soup (10-Min Prep)
A crowd-pleasing, comforting soup that tastes even better the next day. Easy enough for weeknights, special enough for guests.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can diced tomatoes (400g)
- 6 cups vegetable broth
- 1 cup green beans or peas
- 2 cups spinach or cabbage
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
- Optional: chili flakes, fresh parsley, squeeze of lemon
Instructions
- Prep everything
Chop vegetables — should take around 10 minutes. - Build flavor
Heat olive oil in a large pot. Add onion, garlic, carrots, celery. Cook 4–5 minutes. - Add remaining vegetables
Stir in zucchini, bell pepper, tomatoes, green beans. - Add broth & seasonings
Pour in broth. Add salt, pepper, Italian seasoning, paprika. - Simmer
Bring to a boil, then lower heat and simmer 20–25 minutes. - Finish
Add spinach/cabbage in last 2–3 minutes. Add lemon juice if desired.
